First Hike

Last Friday Squareknot and I took Jude on his first hike. We took him out to Usery Park and walked along the trail for about a mile. As you can see Jude was very excited. He could hardly contain himself.

He was practically bursting out of his carrier with excitement.


He worked himself up so much that he passed out. Arms and legs dangling!
All in all it was a very successful first hike. It only took 2 full days of sleep for Jude to recover.

Shorts

Today I am wearing shorts. I love Arizona in the Spring and the signs of Spring are everywhere. I captured a few with my camera this past weekend. I put my life in peril to get the peach tree pictures. They were swarming with bees!

Fantasy Baseball

This last weekend was fantasy baseball draft weekend. Let me tell you, it was serious business in our house. For a full 2 hours my parent's living room was transformed into the command center! Stacy and Zach had their 6 different Excel spreadsheets, their 2 laptops and the television. It was quite the event!

Great Recipe

Zach and I have been trying to eat a lot healthier the last few months and I've found a lot of great recipes thanks to several blogs that are all on my blog list. Anyway, yesterday I tried one from Gina's Weight Watcher Recipes that was wonderful and didn't feel like diet food at all. I was so excited about it that I wanted to share with everyone.


Spinach Lasagna Rolls
Gina's Weight Watcher Recipes
Servings: 9 Serving Size: 1 roll Calories: 188 Points: 4 ww pts
  • 9 lasagna noodles, cooked
  • 10 oz frozen chopped spinach, thawed and completely drained
  • 15 oz fat free ricotta cheese (I like Polly-o)
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • salt and fresh pepper
  • 32 oz tomato sauce
  • 9 tbsp (about 3 oz) part skim mozzarella cheese, shredded
Preheat oven to 350°. Combine spinach, ricotta, Parmesan, egg, salt and pepper in a medium bowl. Ladle about 1 cup sauce on the bottom of a 9 x 12 baking dish.

Place a piece of wax paper on the counter and lay out lasagna noodles. Make sure noodles are dry. Take 1/3 cup of ricotta mixture and spread evenly over noodle. Roll carefully and place seam side down onto the baking dish. Repeat with remaining noodles.

Ladle sauce over the noodles in the baking dish and top each one with 1 tbsp mozzarella cheese. Put foil over baking dish and bake for 40 minutes, or until cheese melts. Makes 9 rolls.

To serve, ladle a little sauce on the plate and top with lasagna roll.
